I ate a lot of banana muffins in my life! And I can tell you that these are pretty much the best. The secret ... sour cream and brown sugar!
¾ cup of sour cream
1 tsp of baking soda
½ cup of butter
1 cup of brown sugar
2 large eggs
1 tsp of vanilla tea
3 crushed ripe bananas
1 tsp of baking powder
2 cups of all purpose flour
Preheat oven to 350 degrees F
In a small bowl, combine sour cream and baking soda. Put aside.
In a large bowl, using a blender, whisk together the butter and the brown sugar for 5 minutes.
Add eggs one at a time and then vanilla tea.
Add bananas and sour cream mixture.
Stir dry ingredients into liquid ingredients.
Divide the dough into the prepared muffin pan and bake for 20 minutes.
