Ingredients

3/4 pound of chicken breasts, cut into 1-inch pieces

salt and pepper

1 tablespoon of cornstarch

1 tablespoon of olive oil

4 cups of broccoli florets

1 red bell pepper, cut into pieces

3/4 cup of unsalted cashew nuts

Sauce and Marinade

6 tablespoons of soy sauce

1 tablespoon of hoisin sauce

3/4 tablespoon of apple cider vinegar

2 tablespoons of honey

1 teaspoon of toasted sesame oil

2 1/2 tablespoons of cornstarch

1/2 teaspoon of fresh ginger, minced

2 garlic cloves, minced

1/2 cup of water

Preparation

  1. In a bowl, mix all the sauce ingredients.
  2. Season the chicken with salt, pepper, cornstarch, and 1 tablespoon of the sauce (step 1).
  3. In a large skillet, heat the oil.
  4. Brown the chicken for 8 minutes.
  5. Add the broccoli and peppers, cook for 2-3 minutes.
  6. Stir in the sauce and add the cashew nuts. Let it simmer until the chicken is cooked and the vegetables are tender.
  7. Serve over rice or noodles.
