If you love apple muffins, this one is really delicious
Because any time is a good time to cook with apples, here is the apple muffin...with streusel topping.
Ingredients
Muffin batter
1 1/2 cups flour
3/4 cup sugar
1/2 teaspoon salt
2 teaspoons baking powder
1 teaspoon ground cinnamon
1 tablespoon vegetable oil
1/3 cup applesauce
1 egg
1/3 cup buttermilk
1 teaspoon vanilla extract
2 large apples, peeled, diced
Streusel Topping
1/2 cup sugar
1/3 cup flour
1/2 cup cold butter, cut into cubes
1 1/2 tsp ground cinnamon

Preparation
Preheat the oven to 350 degrees F. Grease 6 muffin cups.
For the topping, mix 1/3 cup flour, 1/2 cup sugar, butter, and 1 1/2 tsp cinnamon in a small bowl. Use a fork to cut in the butter. Refrigerate the mixture.
For the muffins
In a bowl, mix salt, sugar, flour, baking powder, and cinnamon.
In another bowl, add oil, applesauce, egg, buttermilk, and vanilla extract.
Combine the dry ingredients with the wet ingredients and mix well. Fold in the apple pieces.
Place the batter in the muffin cups and add the topping on top.
Bake in the oven for 25 to 30 minutes.
They keep for up to a week.
