
If you love apple muffins, this one is truly delicious
Because any moment is a good one to cook with apples, here is the apple muffin...with streusel topping.
Ingredients
Muffin batter
1 1/2 cups of flour
3/4 cup of sugar
1/2 teaspoon of salt
2 teaspoons of baking powder
1 teaspoon of ground cinnamon
1 tablespoon of vegetable oil
1/3 cup of applesauce
1 egg
1/3 cup of buttermilk
1 teaspoon of vanilla extract
2 large apples, peeled, diced
Streusel Topping
1/2 cup of sugar
1/3 cup of flour
1/2 cup cold butter, diced
1 1/2 tsp of ground cinnamon

Preparation
Preheat the oven to 350 degrees F. Grease 6 muffins.
For the topping, mix 1/3 cup of flour, 1/2 sugar, the butter, and 1 1/2 tsp of cinnamon in a small bowl. Use a fork to cut the butter. Refrigerate the mixture.
For the muffins
In a bowl, mix the salt, sugar, flour, baking powder, and cinnamon.
In another bowl, add the oil, applesauce, egg, buttermilk, and vanilla extract.
Incorporate the dry ingredients into the wet ingredients and mix well. Stir in the apple pieces.
Place the batter in the muffin molds and add the topping on top.
Bake in the oven for 25 to 30 minutes.
