More and more people are choosing a vegetarian lifestyle. But when the whole family doesn't make this choice, meal preparers may rack their brains to find recipes that will please everyone!
That’s why we offer you this lentil loaf, which can replace your traditional meatloaf with just as much flavor. Or, you can prepare your usual 'carnivore' version and this new recipe for the veggies. That way, you will ensure that all guests are happy!
Ingredients
2 cups (500 ml) of cooked lentils
2 diced carrots
1/2 red bell pepper diced
2 stalks of celery diced
1/2 yellow onion sliced
1 1/4 cups (315 ml) of cremini mushrooms diced
2 cloves of garlic minced
2 tablespoons (30 ml) of tomato paste
1 tablespoon (30 ml) of BBQ sauce
1/3 cup (85 ml) of ketchup
2 tablespoons (30 g) of ground flaxseed
1 tablespoon (15 g) of parsley
A pinch of salt
A pinch of pepper
1/2 cup (125 ml) of instant oatmeal
1/2 cup (125 ml) of breadcrumbs
A pinch of brown sugar
Preparation
Preheat oven to 350 °F (176 °C).
Line a baking sheet with parchment paper.
In a large pan, sauté onions, carrots, celery, peppers, and mushrooms over medium heat.
Season with salt and pepper.
Add garlic and sauté for another minute.
In a food processor, add lentils, cooked vegetables, tomato paste, BBQ sauce, flaxseed, parsley, oats, and breadcrumbs. Season with salt and pepper.
Pulse the mixture (do not puree).
Shape a loaf with the mixture.
Bake in the oven for 35 minutes.
Remove the tray and brush with ketchup. Sprinkle with brown sugar.
