More and more people are opting for a vegetarian diet. But when not everyone in the family makes this choice, those responsible for meals may rack their brains to find recipes that will please everyone!
That’s why we offer you this lentil loaf, which can replace your traditional meatloaf with just as much flavor. Alternatively, you can prepare your usual carnivore version and this new recipe for the veggies. This way, you're sure all your guests will be happy!
Ingredients
2 cups (500 ml) of cooked lentils
2 carrots diced
1/2 red bell pepper diced
2 stalks of celery diced
1/2 yellow onion sliced
1 and 1/4 cups (315 ml) cremini mushrooms diced
2 cloves of garlic minced
2 tablespoons (30 ml) of tomato paste
1 tablespoon (30 ml) of BBQ sauce
1/3 cup (85 ml) of ketchup
2 tablespoons (30 g) of ground flax seeds
1 tablespoon (15 g) of parsley
A pinch of salt
A pinch of pepper
1/2 cup (125 ml) of instant oatmeal
1/2 cup (125 ml) of breadcrumbs
A pinch of brown sugar
Preparation
Preheat the oven to 350 °F (176 °C).
Line a baking sheet with parchment paper.
In a large pan, sauté over medium heat, the onions, carrots, celery, peppers, and mushrooms.
Salt and pepper
Add the garlic and sauté for another minute.
In a food processor, add the lentils, cooked vegetables, tomato paste, BBQ sauce, flax seeds, parsley, oats, and breadcrumbs. Salt and pepper.
Pulse the mixture. (Do not puree).
Form a loaf with the mixture.
Bake for 35 minutes.
Remove the sheet and brush with ketchup. Sprinkle with brown sugar.
