INGREDIENTS

  • 2 chicken breasts, cut into cubes
  • 1 cup of peppers (whichever color you like), cut into cubes
  • 1 onion, roughly chopped
  • 1 zucchini, cut into small cubes
  • 1 cup of broccoli
  • ½ cup of whole grape tomatoes
  • 2 tbsp of olive oil
  • 1 tsp of Italian seasoning
  • Freshly ground salt and pepper [pub]

PREPARATION

  • Preheat the oven to 500°F.
  • Place the chicken and vegetables in a roasting pan or a baking sheet. 
  • Add the olive oil, salt, pepper and Italian seasoning. Mix well.
  • Bake in the oven for 15 minutes or until the chicken is cooked and the vegetables are grilled.
