Ingredients
- 4 salmon fillets
- 30 ml of vegetable broth
- 60 g of butter
- 3 carrots sliced into rounds
- 1 shallot
- 2 leeks thinly sliced
- 400 ml of cream
- 1 tablespoon of flour
- 2 tablespoons of mustard
- The juice of one lemon
- 1 tablespoon of parsley
- Salt and pepper

Preparation
- Cut your salmon fillets into dice.
- In a pot of boiling water, cook the carrots for 20 minutes.
- Add the leeks 5 minutes before the end of the carrot cooking time.
- In a skillet, melt 1/3 of the butter and brown the shallot, the leeks, the salmon and the carrots.
- In a large pot, heat the remaining butter and add the flour.
- Stir in the vegetable broth, cream, and mustard. Mix well.
- Add a pinch of salt and pepper, then the parsley.
- Pour over the salmon and vegetables.
