One of the most famous dishes! Rich and creamy as we like it.

Ingredients

  • 4 salmon fillets
  • 30 ml of vegetable broth
  • 60 g of butter
  • 3 carrots sliced into rounds
  • 1 shallot
  • 2 leeks thinly sliced
  • 400 ml of cream 
  • 1 tablespoon of flour
  • 2 tablespoons of mustard
  • The juice of one lemon
  • 1 tablespoon of parsley
  • Salt and pepper

Preparation 

  1. Cut your salmon fillets into dice.  
  2. In a pot of boiling water, cook the carrots for 20 minutes. 
  3. Add the leeks 5 minutes before the end of the carrot cooking time.
  4. In a skillet, melt 1/3 of the butter and brown the shallot, the leeks, the salmon and the carrots.
  5. In a large pot, heat the remaining butter and add the flour. 
  6. Stir in the vegetable broth, cream, and mustard. Mix well.
  7. Add a pinch of salt and pepper, then the parsley.
  8. Pour over the salmon and vegetables.
