Beef and mushrooms, what a beautiful combination! We enjoy them in all sorts of ways. And when the beef is slow-cooked for a long time and is so tender that it falls apart into juicy pieces, what a delight!

The recipe we're offering today is prepared in a slow cooker, and it's best to let the beef cook for about 9 hours. That may seem very long, but trust us, it's worth it!

Preparation only takes a few minutes and requires just a few ingredients. If desired, you can also add garlic and onions, preferably sautéed. But the onion soup mix already gives the beef a delicious flavor.

Serve it with mashed potatoes and a salad. Use leftover beef in subs.


Ingredients

  • 1 lb (454 g) of fresh sliced mushrooms
  • 1 whole beef roast of 4 lbs (1.8 kg)
  • 1 envelope of 1.25 oz (35 g) of powdered onion soup mix
  • 1 bottle of beer (12 oz liq / 355 ml)
  • ground black pepper

Preparation

Coarsely slice the mushrooms. (If they are sliced too thinly, they will shred during cooking.)

Place a protective liner in the slow cooker (see notes at the end of the recipe).

Place the mushrooms at the bottom of the slow cooker, then put the roast directly on the mushrooms.

Sprinkle the onion soup mix over the beef.

Pour the beer over the beef roast.

Season with black pepper to taste. 

Set the slow cooker to low temperature. Cook for 9 to 10 hours until the meat is easy to pull apart with a fork.

Gently shred the meat with two forks before serving, drizzling it with mushrooms and cooking juices.

Notes:

It is not necessary to use a protective liner for the slow cooker, but it greatly facilitates cleaning and prevents the cooking juices from sticking to the sides. However, never use an all-purpose plastic wrap and opt for products specifically designed for slow cookers.
