Bolognese Sauce that Cooks All Day and Fills the Home with Fragrance

A good meat sauce full of tomatoes, yum!

INGREDIENTS

¼ lb of pancetta or lardons, diced

1 tablespoon of vegetable oil

1 large onion, finely chopped

2 stalks of celery, diced

2 carrots, diced

3 cloves of garlic, chopped

2 lbs of lean ground beef

2 teaspoons of salt

Freshly ground black pepper

¼ cup of dry white wine

2 cans (28 ounces) of crushed tomatoes

3 bay leaves

2 teaspoons of dried oregano

½ cup of half & half (half milk, half cream)

¼ cup of fresh parsley, chopped

PREPARATION

  • In a large nonstick skillet, heat the oil over medium-high heat.
  • Add the pancetta and cook for 4 to 5 minutes.
  • Add the onion, celery, and carrots and cook for 6-7 minutes.
  • Add the ground beef, salt, and pepper and cook for 4 to 5 minutes. Drain off excess fat.
  • Add the wine and cook for 3 to 4 minutes to slightly reduce.
  • Transfer the mixture to the slow cooker.
  • Add the tomatoes, bay leaves, and oregano.
  • Cover and cook on high for 3 to 4 hours or on low for 6 to 8 hours.
  • Discard the bay leaves, add the half & half and parsley.
