This recipe for broccoli and cheddar stuffed chicken breasts is really easy and delicious!
Stuffed with vegetables, the breasts are juicy and they are so quick to make that it makes a great weeknight meal. Accompany them with your favorite salad!
INGREDIENTS:
3 large chicken breasts
Salt and pepper
1 ½ teaspoons (8 ml) garlic powder, divided
¼ teaspoon (1 ml) paprika
1 cup (175 grams) broccoli florets
½ cup (90 grams) diced red bell pepper
1 cup (100 grams) shredded mild cheddar
1 tablespoon (15 ml) mayonnaise
2 tablespoons (30 ml) olive oil
PREPARATION:
Preheat the oven to 425°F (220°C).
Season both sides of the chicken breasts with salt, pepper, paprika, and ½ teaspoon of garlic powder.
With a knife, slice the chicken on the thickness to create a pocket for the stuffing.

Place the broccoli in a microwave-safe dish and add two tablespoons of water. Cover with plastic wrap and cook for one minute. Drain the excess water.

Add the diced bell pepper, cheese, mayonnaise, the remaining garlic powder, and salt and pepper to taste. Combine well.

Arrange the stuffing evenly into the chicken pockets. Use a toothpick to close if necessary.

Heat an oven-safe skillet over medium heat and add olive oil. Sear the chicken for 3-4 minutes on each side.

Cover the skillet with aluminum foil and bake in the oven for 15 to 17 minutes, until the chicken is cooked through. Let it rest covered for 5 minutes before serving.
