Ingredients
1 egg
1/2 cup of brown sugar
1/3 cup of canola oil
1/4 cup of sugar
1/4 cup of sour cream or Greek yogurt
2 teaspoons of vanilla
2 teaspoons of cinnamon
1/2 teaspoon of ground nutmeg
1 cup of flour
1/2 teaspoon of baking powder
1/2 teaspoon of baking soda
3/4 cup of grated carrots
3/4 cup of grated apples
Preparation
Preheat the oven to 350 degrees F, butter and flour a loaf pan.
In a large bowl, combine the egg, brown sugar, canola oil, sugar, sour cream, vanilla, cinnamon, and nutmeg.
Add the flour, baking powder, and baking soda, fold using a spatula.
Add the carrots and apples, mix, but not too much.
Transfer the batter to the prepared pan.
Bake for about 45 minutes or until the top is golden, the center is set, and a toothpick inserted in the center comes out clean, or with a few moist crumbs, but not raw batter.
Let cool for 15 minutes before removing from the pan.
