Moreover, this succulent recipe can also be made with other root vegetables like parsnips, beets, turnips, sweet potatoes, etc.
The recipe also offers a delicious dip based on Greek yogurt, but the fries can also be enjoyed plain, simply with an extra sprinkle of parmesan, or another dip of your choice.

Oven-baked Carrot Fries with Garlic and Parmesan
Yield: 2 servings
Preparation time: less than 30 minutes
Ingredients
2 large carrots
1 tablespoon (15 ml) of oil
¼ cup (25 gr) of finely grated parmesan
1 tablespoon (15 ml) of garlic powder (not to be confused with garlic salt)
1 teaspoon (5 ml) of pepper
¼ cup (10 gr) of fresh chopped parsley
½ teaspoon (2.5 ml) of salt
Dip
2 tablespoons (30 ml) of plain Greek yogurt
1 tablespoon (15 ml) of lemon juice
½ teaspoon (2.5 ml) of garlic salt
1 teaspoon (5 ml) of pepper
Preparation
Preheat the oven to 400 °F/200 °C.
Trim the top and bottom of the carrots and peel them if needed.
Cut the carrots in half, then slice each half into three lengthwise.

In a large bowl, place all the carrot sticks.

Pour all the other ingredients (except those for the dip) over the carrot sticks.

Mix everything well, so the carrots are coated with spices and parmesan.

Spread the carrots on a baking sheet in an even layer.

Bake for 15-20 minutes (for fries that are more or less crispy as desired).
While the fries are baking, prepare the dip. Mix all the dip ingredients in a small bowl well.

Once the fries are done, let them cool on the sheet for 5 minutes before transferring them to plates.
Sprinkle the carrots with extra parmesan and a bit of chopped parsley, if desired.
Serve the carrot fries hot with the dip and a main dish of choice, or serve as an appetizer or starter.
Recipe notes:
Replace parmesan with grated asiago cheese or romano for another tasty alternative.
