Ingredients
2 eggs
3/4 cup applesauce
1/3 cup honey or maple syrup
1 teaspoon vanilla
1 teaspoon cinnamon
1/2 teaspoon nutmeg
2 teaspoons baking powder
3/4 teaspoon baking soda
A pinch of salt
1 1/2 cups grated carrots,
1 cup oats
1 cup whole wheat flour
1/3 cup raisins
1/3 cup chopped nuts

Preparation
Preheat the oven to 350 degrees F and grease a muffin tin.
In a bowl, add the eggs, applesauce, honey, vanilla, cinnamon, nutmeg, baking powder, baking soda, and salt.
Add the carrots, oats, and flour.
Mix, but not too much.
Incorporate the raisins and nuts.
Pour the batter evenly into the muffin tin.
Bake for 25 minutes.
