
Mmm, enjoy the weather by cooking a good soup!
With the rather cool temperatures, we treat ourselves to an excellent soup recipe...Carrots, apples, and ginger!
Ingredients
3 tablespoons of olive oil
1 sliced onion
1 minced garlic clove
2 tablespoons of fresh ginger
1 apple, peeled and sliced
4 cups of sliced carrots
4 cups of vegetable broth
A pinch of nutmeg
salt and pepper

Preparation
In a pot, heat the olive oil and add the onions and cook for 5 minutes.
Add the ginger and garlic and cook for an additional minute.
Add the sliced apple and diced carrots, then cook for 3 minutes.
Mix in the vegetable broth and bring to a boil.
Let simmer for 30 minutes then let cool for 10 minutes before blending.
Return to the pot, add a bit of nutmeg, salt, and pepper.
