Chicken Alfredo Lasagna Rolls with Spinach Baked in the Oven

With lasagna noodles, make these delicious rolls filled with fresh and appetizing ingredients. A meal that will satisfy all appetites!


Ingredients

  • 10 lasagna noodles
  • 2 packages of cream cheese, softened
  • 1 cup (250 ml) grated parmesan
  • 1 teaspoon (5 ml) garlic powder
  • 2 cups (500 ml) chopped fresh spinach
  • 2 cups (500 ml) chopped roasted chicken
  • 3 cups (675 ml) shredded mozzarella cheese, divided
  • ¼ cup (65 ml) olive oil
  • 8 oz (225 g) sliced mushrooms
  • 2 cloves of minced garlic

Alfredo Sauce

  • ½ cup (125 ml) butter
  • 2 cups (500 ml) heavy cream or half and half
  • 2 cups (500 ml) grated parmesan
  • ½ teaspoon (2.5 ml) garlic salt


Preparation

Cook the lasagna noodles according to package instructions.

Once cooked, lay the noodles on a flat working surface.

In a large bowl, add the cream cheese, parmesan, garlic powder, and mix well.

Fold in the chopped spinach and mix well. 

Spread the mixture evenly over the noodles. Sprinkle the chicken evenly over the noodles. 

Sprinkle 1 1/2 cups of mozzarella over the noodles and roll each noodle.

Place the rolls in an oven-safe dish. Preheat the oven to 350 °F (180 °C).

In a skillet, heat the oil over medium heat and add the mushrooms and garlic. Sauté until tender and set aside.

In a saucepan, melt the butter, then add the cream and garlic salt and stir.

Remove from heat when the mixture is warm and add the parmesan, then mix until smooth.

Pour the Alfredo sauce over the rolls. Top with remaining mushrooms and mozzarella.

Bake for 30 minutes or until the cheese is melted.
