Ingredients:
4 boneless, skinless chicken breasts
1 sliced red bell pepper
1 sliced yellow bell pepper
1 sliced green bell pepper
2 cloves of garlic, minced
1 teaspoon (5 ml) of paprika
1 teaspoon (5 ml) of dried oregano
1 cup (250 ml) of grated cheddar cheese
1/2 cup (125 ml) of grated parmesan
3 tablespoons (45 ml) of olive oil
Salt and black pepper, to taste
Optional: chopped fresh parsley for garnish

1. Preheat the oven to 375°F (200°C).
2. In a large bowl, mix the chicken breasts, garlic, paprika, oregano, salt, pepper, and olive oil to evenly coat the chicken.
3. Add the sliced peppers to the chicken and mix.
4. Pour the chicken and pepper mixture into a 9 x 13-inch casserole, spreading evenly.
5. Sprinkle the grated cheddar cheese and grated parmesan over the chicken and peppers.
6. Bake for 25 to 30 minutes or until the chicken is fully cooked and the cheese is melted and bubbling.
7. Remove from the oven and sprinkle with chopped parsley for garnish, if desired.
