Ingredients

  • 8 chicken thighs, bone and skin on
  • 16 ounces of red baby potatoes, cut in half
  • 16 ounces of baby carrots 
  • 16 ounces of green beans 
  • 2 tablespoons of fresh parsley

For the sauce

  • 1/2 cup of soy sauce
  • 1/2 cup of honey
  • 1/4 cup of ketchup
  • 2 cloves of garlic, minced
  • 1 teaspoon of dried basil
  • 1/2 teaspoon of dried oregano
  • 1/4 teaspoon of red pepper flakes
  • 1/4 teaspoon of pepper

Preparation

  1. In a bowl, mix soy sauce, honey, ketchup, garlic, basil, oregano, pepper flakes, and pepper.
  2. In the slow cooker, place chicken thighs, potatoes, carrots, and pour the sauce mixture over them.
  3. Cover and cook on low heat for 7 to 8 hours or on high heat for 3 to 4 hours, ideally basting the chicken and vegetables every hour if possible. 
  4. Add green beans 30 minutes before the end of the cooking time.
  5. If you prefer crispy skin, place the chicken under the grill for a few minutes.
