Creme De La Crumb
Ingredients
2 yellow onions, sliced
3 tablespoons of butter
1 cup + 3 tablespoons of beef broth, divided
4 boneless skinless chicken breasts
1 tablespoon of oil
salt and pepper
1 teaspoon of Italian seasoning (or ¼ teaspoon of dried basil + ¼ teaspoon of dried thyme + ½ teaspoon of dried oregano)
2 tablespoons of flour
4 slices of Provolone cheese
4 slices of Swiss cheese
¾ cup grated Parmesan cheese
fresh thyme or fresh parsley
Preparation
Preheat the oven to 400 degrees F or to low broil.
In a large cast-iron skillet (see note at the bottom of the recipe), melt the butter. Add the onions and 3 tablespoons of beef broth. Cook on low heat for 15 minutes. Set aside on a plate and cover to keep warm.
Drizzle the chicken with oil, then season with salt and pepper and Italian herbs.
In the same skillet, cook the chicken for 5 minutes on each side (do not clean the pan between onions and chicken). The chicken does not need to be fully cooked.
Transfer the chicken to a plate and cover to keep warm, then return the onions to the skillet.
Sprinkle the flour over the onions and stir for 1 minute. Add the beef broth and continue to cook, stirring constantly, until the mixture comes to a boil. Season with salt and pepper.
Return the chicken to the skillet.
Place a slice of provolone on each breast, then a slice of Swiss cheese, then the Parmesan cheese.
Transfer the skillet to the oven and bake for about 10 minutes until the chicken is fully cooked and the cheeses are melted.

Note: if you don't have a cast-iron skillet, any other oven-safe skillet will do, or you can transfer everything to an oven-safe baking dish for the baking part of the recipe.
