Ingredients

Meatballs:

  • 1 lb of ground chicken
  • 1 cup of cooked white rice, cooled to room temperature
  • 1 large egg
  • 1 small onion, grated
  • 1 clove of garlic, pressed
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 1/2 cup of flour
  • 2 tablespoons of olive oil


Sauce:

  • 2 tablespoons of butter
  • 2 tablespoons of flour
  • 2 cups of low-sodium chicken broth
  • 1/4 cup of sour cream (or Greek yogurt / heavy cream)
  • 1/2 to 1 teaspoon of paprika
  • Salt and pepper to taste
  • Freshly chopped parsley (for garnish)


Preparation

1. In a large bowl, mix the ground chicken, cooked rice, egg, grated onion, garlic, salt, and pepper. Roll the meat into small balls, then roll the meatballs in a bowl of flour, removing the excess flour.


2. Heat a large skillet over medium heat and add the olive oil. Transfer the meatballs to the skillet and cook for 4 minutes on one side, then turn them over with tongs, cover, and cook for another 3 minutes or until golden on both sides. Remove them from the heat and place on a plate.


3. In the same skillet over medium heat, melt the butter then stir in the flour. Mix until the sauce is golden. Stir in the chicken broth and mix until it begins to thicken. Add the sour cream and season with paprika, salt, and pepper.


4. Let the sauce simmer, stirring occasionally, until the sauce thickens enough. Add the meatballs, turning them to coat well with sauce. Garnish with parsley.

You can serve them with a side of your choice: mashed potatoes, pasta, egg noodles.
