Crispy Garlic Butter Parmesan Potatoes: The Perfect Side Dish!

Crispy garlic butter parmesan smashed potatoes are soft on the inside and crispy on the outside. A delicious guilty pleasure, they are drenched in garlic butter and melted parmesan cheese!

It simply tastes like happiness!

They are a great side dish for many main courses, whether they contain meat or are vegetarian. They can also make a meal on their own. Sit in front of the TV with a tray of these delicious potatoes and dip them in tomato sauce or sour cream. Delicious!

This recipe makes 8 servings.

Ingredients:

  • 2 lb (1 kg) Yukon Gold potatoes or Carisma
  • 3 tablespoons (45 ml) melted butter
  • A little olive oil
  • 4 cloves of garlic, crushed
  • 1 tablespoon fresh parsley, chopped
  • Coarse salt and pepper to taste
  • 2 tablespoons (30 g) parmesan

NOTE: You can replace parsley with rosemary or thyme, or add them all. You can also add a lemony flavor and oregano. Or add bacon and cheese of your choice. Let your creativity run wild!

Preparation:

  1. Preheat the oven to grill at medium-high heat (about 200 °C | 400 °F).
  2. Place the potatoes in a large pot of salted water and bring to a boil.
  3. Cook covered for 30 to 35 minutes or until the potatoes are tender when pierced with a fork. Drain well.
  4. Lightly grease a large baking sheet or baking dish with a cooking oil spray.
  5. Arrange the potatoes on the sheet and use a potato masher to slightly flatten them in one piece (not too hard or they will be smashed).

  1. Mix the butter, garlic, and parsley. Pour this mixture over each potato. Sprinkle with salt and pepper and lightly drizzle with olive oil.

  1. Grill until the potatoes are golden and crispy (about 10-15 minutes). 
  2. Remove from the oven, sprinkle with parmesan and return to the oven until the cheese is melted.
  3. Season with a little salt and parsley and serve immediately.
