Chicken

  • 2 lb (905 g) boneless, skinless chicken thighs
  • 1 tablespoon (15 ml) of salt
  • 1 teaspoon (5 ml) of white pepper
  • 1 cup (125 g) of cornstarch
  • 3 cups (375 g) of flour

Orange Sauce

  • 1 tablespoon (15 ml) of oil
  • ¼ teaspoon (1.25 ml) of chili pepper flakes
  • 1 tablespoon (15 ml) of minced garlic
  • ½ teaspoon (2.5 ml) of minced ginger
  • ¼ cup (50 g) of sugar
  • ¼ cup (55 g) of brown sugar
  • ¼ cup (60 ml) of orange juice
  • ¼ cup (120 ml) of distilled white vinegar
  • 2 tablespoons (30 ml) of soy sauce
  • 2 tablespoons (30 ml) of water

Preparation

On a cutting board, cut the chicken into 1 x 1-inch (2 x 2 cm) cubes and set aside.

Remove the chicken from the pan and transfer to a paper towel-lined sheet.

Place the heavy-bottomed pan over medium-high heat and add the oil.

Once the oil begins to shimmer, add the chili pepper flakes, ginger, and garlic, and cook for 30 seconds, stirring constantly.

Add the sugar and brown sugar, then mix.
