Ingredients
- For the cake:
- 1 ¾ cups pitted dates, chopped
- 1 tsp baking soda
- 3/4 cup boiling water
- 1/3 cup butter
- 3/4 cup sugar
- 2 eggs, beaten
- 1 ⅛ cups flour
- For the sauce:
- 3/4 cup brown sugar
- 1/3 cup butter
- 2/3 cup evaporated milk
- 1 tsp vanilla extract
Preparation
- Preheat the oven to 350 degrees F and butter an 8-inch square dish.
- In a bowl, mix the dates with the baking soda.
- Cover the dates with boiling water.
- In a bowl, cream 1/3 cup butter with sugar.
- Add the eggs and whisk again.
- Incorporate the dates with their water and the flour using a spatula.
- Pour the batter into the prepared dish.
- Bake in the oven for 40 minutes.
- In a saucepan, mix the brown sugar, 1/3 cup butter, and evaporated milk.
- Bring to a boil and let simmer for 5 minutes.
- Remove from heat and add vanilla.
- Pour over the still hot cake
