You have made a lot of mashed potatoes and you're wondering how to use them the next day? Here is the recipe that will make you want to always make too much mashed potatoes!

These little puffed bites are the ideal way to use leftover mashed potatoes. They are crispy on the outside but hot and creamy on the inside.

Ingredients:

2 cups of mashed potatoes

3 large eggs, beaten

1 cup of cheddar cheese, grated

1/4 cup of bacon bits

1/4 cup of chives, chopped

Pepper, to taste

1/4 cup of parmesan, grated

Decadent Potato Clouds

Preparation:

1. Mix the mashed potatoes, eggs, cheddar cheese, bacon bits, and chives.

2. Pepper to taste.

3. Grease a muffin tin and drop a heaping spoonful into each mold.

4. Sprinkle each cup with parmesan.

5. Bake for 30 to 35 minutes at 400°F (205°C) or until golden brown.

6. Let cool for 5 minutes and serve warm with sour cream.
