The perfect side dish for any meal!
These Parmesan potatoes are by far the perfect side dish for almost any meal, from delicate fish to roast chicken, to homemade meatloaf. They are an elegant addition to any meal!
Ingredients:
1 1/2 pounds (680 g) baby potatoes (cut in half)
1/4 cup (65 ml) melted butter
2 grated garlic cloves
1/3 cup (85 g) grated Parmesan
1 teaspoon (5 g) smoked paprika
Salt and pepper
1/4 cup parsley
Preparation:
1. Preheat the oven to 400°F (205 °C).
2. Add the melted butter to a 9 x 13 inch baking dish.
3. Add the Parmesan, garlic, salt, pepper, paprika, and parsley to the melted butter.
4. Spread everything evenly in the dish.
5. Score the potatoes about 1/4 inch deep in a crisscross pattern.
6. Add the potatoes cut side down in the dish.
7. Bake until the potatoes are tender and the Parmesan forms a golden crust at the bottom of the potatoes, about 20 to 25 minutes.
8. Let rest for 5 minutes before using a spatula to lift the potatoes out.
Notes:
If you want even crispier potatoes, soak them for 30 minutes to 24 hours before cooking.
Using freshly grated Parmesan will give a fresher flavor.
