The cold weather is starting to set in, and there's nothing more comforting than good comfort food. And when it comes to comfort food, the first dish that comes to my mind is certainly a tasty homemade gratinated onion soup.

Ingredients
5 yellow onions, peeled and sliced
3 tablespoons of butter
4 minced garlic cloves
3 tablespoons of flour
1/2 cup of dry white wine
6 cups of beef broth
1 teaspoon of Worcestershire sauce
1 bay leaf
3 sprigs of thyme (or 1 teaspoon of dried thyme)
Salt and pepper
1 sliced baguette
Grated cheese (Gruyere, Asagio, Swiss, or Mozzarella)
Preparation
In a large pot, melt the butter and add the onions. Cook until they are golden and caramelized, about 40 minutes, stirring every few minutes.

Add the garlic, cook for 1 minute, then incorporate the flour and cook for an additional 1 minute.
Pour in the wine to deglaze the pot and scrape the bottom of the pot.
Add the broth, Worcestershire sauce, bay leaf, and thyme. Partially cover, bring to a boil, and let simmer for 10 to 15 minutes. Season to taste with salt and pepper. Remove the bay leaf and thyme sprigs.
Gimme Some Oven
Preheat the oven to 400 degrees F and place the sliced bread in a single layer on a baking sheet. Bake for 6 to 8 minutes.
Increase the oven temperature to broil.
Place your soup bowls on a baking sheet.
Divide the soup among them, add one or two slices of baguette, and top with cheese.

Grill in the oven for 2 to 4 minutes.
Remove and serve immediately.
