If you need to abstain from drinking alcohol, you will want to know the answer to this question...

The definitive answer is no! Alcohol does not entirely disappear from your dish even when cooked. The final percentage, however, may be minimal and will depend on various factors such as the cooking method used, the cooking time, and the quantity and type of alcohol you have added.

How to calculate the percentage of alcohol remaining in your dish:

  • If alcohol is added to a dish and it is immediately removed from the heat, 85% of the alcohol will still be present in your preparation.
  • If the alcohol is flambéed, 75% of the alcohol will still be present in the preparation.
  • If the alcohol is cooked for 25 minutes, 45% will remain.
  • If alcohol is added to the preparation and cooked with the dish, the alcohol content will vary depending on the cooking time, the dish, and the cooking method. For a cooking time of:

25 minutes = 40%

55 minutes = 35%

1h05 = 25%

1h50 = 20%

2h = 10%

2h55 = 5%

You can see that even after almost 3 hours of cooking, there will always be a small amount of alcohol left in your dish.
