Double chocolate, applesauce, and Greek yogurt, a muffin almost without sugar and flour!

These are by far the best muffins I think I have made so far

 The smell released during the baking of these muffins is fantastic!  I assure you of happy children when they return home

Ingredients

  • 1/4 cup of cocoa powder
  • 2 tablespoons of oat flour 
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 2 tablespoons of brown sugar 
  • 1/2 cup of creamy peanut butter
  • 1/4 cup of unsweetened applesauce 
  • 1/4 cup of vanilla Greek yogurt 
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of honey
  • 1 egg
  • 5 tablespoons of dark chocolate chips


Preparation

Preheat the oven to 350 degrees f and grease a muffin pan with 9 compartments and add water to the 3 remaining compartments.

In a large bowl, mix the cocoa powder, oatmeal (reduce regular oats into flour. Ensure you measure the oats after reducing them to flour), baking soda, baking powder, salt, and brown sugar.

In a second bowl, mix the peanut butter (do not heat), applesauce, Greek yogurt, vanilla, and honey.

Add the dry ingredients to the wet ingredients and add the egg. Do not overmix.

Fold in the chocolate chips.

Bake in the oven for 18 to 22 minutes.
