We cook the donuts in coconut oil, which is healthier and withstands high heat well. Plus, your donuts won't be greasy.

Yield: 12 donuts

Ingredients

1 peeled and grated apple

1 tablespoon of fresh lemon juice

1 cup of flour

1 1/2 teaspoons of baking powder

3 tablespoons of sugar

1/4 teaspoon of salt

1 egg

1/3 cup of milk

Glaze:

1/2 cup of icing sugar

1/2 teaspoon of pure vanilla extract

2 to 3 tablespoons of milk

(make a small batch of glaze that is enough to lightly coat the donuts)

For frying:

virgin coconut oil or canola

Preparation

In a large bowl, combine all the dry ingredients.

In another bowl, whisk the egg with the milk and add to the dry ingredients.

Incorporate the grated apple.

In a saucepan, heat about 1 inch of coconut oil to 350 degrees f.

Cook the donuts until they are golden, turning them often.

Drain on absorbent paper.

In a bowl, combine the icing sugar, vanilla, and milk.

Using a pastry brush, coat the donuts.
