Tender pieces of beef, lots of vegetables, a delicious broth, and spices, that's what makes the best beef stew possible!

Ingredients

  • 2 tablespoons of olive oil
  • 2 pounds of stew meat, cut into 1-inch cubes
  • Salt and pepper
  • 1 pound of red baby potatoes cut in half
  • 4 carrots, sliced
  • 1 onion, diced
  • 3 cloves of garlic minced
  • 3 cups of beef broth
  • 2 tbsp of tomato paste
  • 1 tablespoon of Worcestershire sauce
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • 1 teaspoon of smoked paprika
  • 2 bay leaves
  • 1/4 cup of flour
  • 2 tablespoons of fresh parsley chopped

Preparation

  1. In a skillet, heat the olive oil.
  2. Season the beef with salt and pepper, then brown the meat on all sides.
  3. In the slow cooker, place the beef, potatoes, carrots, onion, and garlic.
  4. Stir in the beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, smoked paprika, and bay leaves. Season with salt and pepper.
  5. Cover and cook on low for 7 to 8 hours or high for 3 to 4 hours.
  6. In a small bowl, mix the flour with 1/2 cup of cooking broth.
  7. Stir the flour mixture into the slow cooker.
  8. Cover and cook on high for an additional 30 minutes.
