Grandma's Delicious Homemade Cake

Homemade desserts, especially those made by a lovely grandmother, are always the best!

The secret to this delicious, spongy, and foolproof cake? It has been tested and approved countless times by our grannies!

This cake contains a large amount of sugar, and you can certainly reduce it if needed, but know that the caramelized aspect of this cake is due to the generous layer of brown sugar on top. Try it and you'll understand! 

It will take you about 1 hour and 10 minutes to prepare this cake, and you will get about 12 to 16 servings.


Ingredients

Cake

  • 1 1/2 cups (300 g) sugar
  • 2 cups (230 g) all-purpose flour
  • 1 teaspoon (5 ml) baking soda
  • 1/2 teaspoon (2.5 ml) salt
  • 2 large eggs
  • 1 can of 20 oz (567 g) crushed pineapple, with juice
  • 1 cup (200 g) brown sugar
  • 1 cup (250 ml) pecans, chopped

Frosting

  • 1 cup (250 ml) evaporated milk
  • 1/2 cup (113 g) sugar
  • 1/2 cup (1 stick) unsalted butter
  • 1 teaspoon (5 ml) vanilla


Preparation

Preheat the oven to 350 ºF (180 ºC). 

Lightly grease a 9 x 13 inch rectangular baking dish with butter or spray with non-stick cooking oil.

In a large bowl, whisk together the sugar, flour, baking soda, and salt.

Then add the eggs and pineapple into the dry mixture and mix well.

Pour the batter into the pan.

Top the batter with an even layer of pecans.

Then, spread the brown sugar evenly using your hands.

Place the dish in the oven and bake for 40-45 minutes, checking towards the end to avoid overcooking (the cake should not be too dry).

While the cake is baking, combine the evaporated milk, sugar, and butter in a medium saucepan over medium-high heat and bring to a boil.

Remove from heat and stir in the vanilla extract, then pour over the still-hot cake.

Allow the cake to cool so it can absorb the frosting, then slice and serve.

Serve with a scoop of vanilla ice cream, if desired.
