Believe it or not, this cookie is healthy, gluten-free, and requires no baking.

So it's super quick to make, fun to cook, and even more fun to eat... hmm :) Your kids won't even notice they're better for health.

They're also perfect for office snacks! Isn't that great?

Here's the recipe!

Ingredients

  • 1 cup (250 ml) of natural peanut butter
  • 1/3 cup (190 ml) of honey or maple syrup
  • 1/2 cup (125 ml) of coconut oil (or butter if you prefer)
  • 2 teaspoons (10 ml) of vanilla
  • 2 1/4 cups (565 ml) of gluten-free oats
  • 6 tablespoons (90 ml) of cocoa powder

Preparation

  1. Combine the first three ingredients in a saucepan and heat gently.
  2. If you are using raw honey, be careful to only heat until the coconut oil melts and the peanut butter softens.
  3. Then add the vanilla, oats, and cocoa and mix well.
  4. Drop by spoonfuls onto a tray and let cool.
  5. Store in an airtight container in the refrigerator.
  6. And there you go, they're ready to bring in your lunches :)

Notes

  • If you want your cookies to be sweeter, you can use 3/4 cup of honey or maple syrup instead of 1/3 cup.
  • For peanut allergies, you can replace peanut butter with any other nut butter. It's particularly good with almond butter!
  • You can use regular peanut butter, but this will make your cookies low sugar instead of sugar-free.
