Believe it or not, this cookie is healthy, gluten-free and requires no baking.
So it's super quick to make, fun to prepare and even more enjoyable to eat... hmm :) Your kids won't even notice they're healthier.
They are also ideal for office snacks! Isn't that great?
Here's the recipe!
Ingredients
- 1 cup (250 ml) natural peanut butter
- 1/3 cup (190 ml) honey or maple syrup
- 1/2 cup (125 ml) coconut oil (or butter if you prefer)
- 2 teaspoons (10 ml) vanilla
- 2 1/4 cups (565 ml) gluten-free oats
- 6 tablespoons (90 ml) cocoa powder

Preparation
- Combine the first three ingredients in a saucepan and heat gently.
- If you are using raw honey, be careful to heat only until the coconut oil melts and the peanut butter softens.
- Then add the vanilla, oats and cocoa and mix well.
- Drop by spoonfuls onto a tray and let cool.
- Store in an airtight container in the refrigerator.
- There you go, they're ready to take in your lunches :)

Notes:
- If you want your cookies to be sweeter, you can use 3/4 cup of honey or maple syrup instead of 1/3 cup.
- For peanut allergies, you can substitute peanut butter with any other nut butter. It's especially good with almond butter!
- You can use regular peanut butter, but that will make your cookies low-sugar instead of sugar-free.
