Preparation
Preheat the oven to 375º F (190ºC).
In a food processor, combine the flour, sugar, and salt. Then add the cold butter.
Pour the cold water one tablespoon at a time to get a crumbly mixture.
Take the dough out of the food processor, wrap it in plastic wrap and refrigerate for at least 2 hours.
In a large bowl, mix the apples with the lemon juice, flour, sugars, cinnamon, and nutmeg. Set aside.
Once the dough is well chilled, remove it from the plastic wrap and divide it in half. Return one half to the refrigerator, wrapped in plastic wrap.
On a lightly floured surface, roll the dough into a circle with a circumference of 12-14 inches and a thickness of about 1/4 inch.
Carefully transfer the dough to a pie dish, gently pressing the sides and bottom so that the dough adheres well to the dish. Trim the excess dough, leaving about 1/2 inch over the edge and fold it over the rim of the dish.
Take the second half of the dough out of the refrigerator and roll it to form a circle the same size as before.
Pour the apple mixture into the dish over the crust and cover the top of the apples with pieces of butter.
In a bowl, beat the egg yolk and add a little water. Brush the edges of the dish covered by the dough with the egg mixture.
Cover the entire top of the pie with the remaining dough. Poke holes in the top of the dough to allow heat to escape.
Seal the edges of the pie with a fork.
Brush the egg mixture on top of the dough and sprinkle with sugar.
Bake in the oven for 50 minutes, or until the crust is golden brown.
