The kids are completely addicted to them!
In October, I take advantage of each year to make myself a few beignets (before making my famous Christmas beignets in December!). The kids love them, and I treat myself at the same time!
Ingredients:
For the beignets:
1 egg
¼ cup of sugar
1 cup of warm milk
1 tablespoon of active dry yeast
a pinch of salt
2 teaspoons of vanilla extract
3 cups of flour
1 stick of butter

1 stick of melted butter
3/4 cup of sugar
2 tablespoons of cinnamon

Preparation
Using your stand mixer, whisk the egg and sugar.
Add the yeast, salt, and vanilla to the milk.
Incorporate the flour and butter alternately until the dough is no longer sticky.
Knead the dough with the hook, then add the butter, little by little.
On a floured surface, knead the dough with your hands and form a ball.
Oil a bowl and place the dough in it, cover with a damp cloth.
Let rest for 1 hour.
Preheat the oven to 400 degrees F and cover a baking sheet with parchment paper.
Knead the dough again, roll it out, and use a cookie cutter to cut out your beignets.
Place your beignets on the prepared sheet, cover with plastic wrap, and let rest for 30 minutes.
Bake in the oven for 8 minutes.
Brush your beignets with melted butter, then sprinkle with the cinnamon and sugar mixture.
