This simple recipe will give you a juicy and flavorful roast every time.
Ingredients
2.5-pound sirloin tip roast
3 cloves of garlic, minced
Preparation
1-Start by salting your roast the day before (this will make a more flavorful, evenly salted roast). Rub the salt on the roast, wrap it in plastic wrap, then place it in your refrigerator.
2-The next day, remove the roast about an hour before cooking to allow it to come to room temperature.
3-Preheat to 250° F. While the oven preheats, rub your roast with ½ tablespoon of oil and the minced garlic, then rub evenly with your spice mixture (pepper, oregano, basil, red pepper flakes).
4-In a pan with a bit of oil, sear your roast on each side (3-4 minutes per side).
5-Place the roast on a rack on a baking sheet.
6-Cook the roast for about an hour and twenty minutes, or until the meat reaches 115° F on a meat thermometer (the thermometer is a great kitchen tool!)
7-Turn off your oven, leaving the roast inside for about 30-40 minutes or until it reaches 130° F for a medium-rare doneness.
8-Keep the door closed the entire time to maintain the heat!
9-After the roast has reached the desired temperature, remove it from the oven and let it rest for 15 minutes.
