A well-risen donut, with a nice color, a light and airy dough!
Being a foodie, I love them!
Yield: 40 donuts
Ingredients
For the donuts
3 packets of 7 g fast-acting yeast
3/4 cup of water (105 -115 degrees f)
2 1/4 cups (530 ml) of milk, boiled and cooled
3/4 cup of sugar
1 1/2 teaspoons of salt
3 eggs
1/2 cup of shortening
7 1/2 cups of canola oil for frying
For the glaze
3 cups of powdered sugar
2 1/4 teaspoons of vanilla
6 to 9 tablespoons of water
Preparation
In a cup, add the yeast to the warm water, then let it rest.
Heat the milk in the microwave and let it cool.
*** Milk contains an enzyme that will destroy the yeast, if it is not heated then cooled, your donuts will not rise.
In the bowl of your stand mixer, combine the yeast mixture, milk, sugar, salt, eggs, shortening, and 3 cups of flour.
Beat for 2 minutes.
Cover and let the dough double in size, about 30 to 60 minutes.
Once the dough is risen, transfer the dough to the floured surface and roll the dough to 1/2 inch thick.
Cut your donuts
Cover and let rise again from 30 minutes to 12 hours.
In a small bowl, combine all the glaze ingredients.
In a deep fryer, heat your oil to 350 f.
Carefully place the donuts in the oil.
Cook the donuts about 1 minute on each side.
Drain on a paper bag.
Dip in the glaze.
