Fresh and crunchy, this CORN salad will make your taste buds dance... And that's in less than 5 minutes!

You will serve this salad at each of your BBQs, that's for sure!

INGREDIENTS

  • 4 ears of corn (or 5 cups of frozen corn, not thawed)
  • 1 1/2 tablespoons of olive oil
  • 2 tablespoons of mayonnaise
  • 3 tablespoons of sour cream (or yogurt)
  • 3/4 cup of freshly grated parmesan
  • 1 tablespoon of Jalapeno, seeded and finely chopped
  • 1 cup of fresh coriander, roughly chopped
  • 1 cup of green onions, chopped
  • 1/2 red onion, finely chopped
  • The juice of 1 lime
  • Salt and pepper

PREPARATION

  • Remove the kernels from the fresh ears of corn. If using frozen, do not thaw.
  • Heat 1 tbsp of olive oil in a pan over high heat.
  • Add half of the corn and shake it to spread.
  • Cook, stirring occasionally, for 3 minutes (4 minutes for frozen corn) or until the kernels are grilled.
  • Transfer to a bowl.
  • Add the remaining oil to the pan and cook the remaining corn, then add to the bowl.
  • Add the mayonnaise, sour cream, and parmesan. Stir to combine.
  • Add the remaining ingredients.
  • Adjust the seasoning.
