Transform your chicken breasts into a flavorful meal with this Italian-inspired recipe. Instead of traditional bruschetta on a piece of bread or toast, this poultry version contains far fewer carbs.
And the result? Tender, flavorful chicken that's finger-licking good.
Serve it with a fresh green salad, oven-grilled vegetables, or steamed vegetables.
Italian Herb Bruschetta Chicken

Ingredients
For the chicken :
2 large boneless, skinless chicken breasts, cut in half lengthwise to make 4 fillets
3 teaspoons (15 ml) of Italian seasoning
2 teaspoons (10 ml) of minced garlic
salt to taste
1 tablespoon of olive oil (for cooking)
For the topping :
4 Roma tomatoes, finely chopped
1/4 of a red onion, finely chopped (or 3 cloves of garlic, finely chopped)
4 tablespoons (60 ml) of freshly shredded basil
2 tablespoons (30 ml) of olive oil
salt to taste
½ cup (125 ml) of freshly grated parmesan
For the balsamic glaze :
1/2 cup (125 ml) of balsamic vinegar
2 teaspoons (10 ml) of brown sugar (optional)
Preparation
Season the chicken with Italian seasoning, garlic, and salt.
Heat the oil in a skillet and sear the chicken breasts over medium-high heat until golden on both sides and fully cooked (about 6 minutes per side). Remove from skillet and keep warm.
While the chicken is cooking, prepare the balsamic glaze by mixing the brown sugar and balsamic vinegar in a small saucepan over high heat. Bring to a boil. Reduce to low heat, let simmer for 5 to 8 minutes, or until the mixture thickens. (Without brown sugar, let the vinegar simmer for 12-15 minutes over low heat).
Mix the tomatoes, red onion, basil, and olive oil in a bowl. Season with salt to taste. Top each chicken breast with the tomato mixture and parmesan.
If you don’t have pre-made Italian seasoning, use dried Italian herbs. You can mix 1 teaspoon (15 ml) of dried oregano, 1 teaspoon (15 ml) of dried basil, and 1 teaspoon (15 ml) of dried parsley.
To save time, you can also buy a balsamic glaze or reduction at the grocery store.
