Marinated beets, there's no better recipe than mine!
A must for every good family!
Ingredients
12 pounds of beets (12-24 beets depending on size)
1 cup of water
2 cups of vinegar
1/2 cup of granulated sugar
2 teaspoons kosher salt
2 tablespoons of Pickling Spice (club house)
Preparation
Prepare the beets
Wash, scrub, and cut the beets.
Place the beets in a large pot and cover with water, bring to a boil and then simmer until tender, about 30 minutes.
Remove from water and transfer the beets immediately with ice water.
Peel and slice into approximately 1/4 inch slices.
Prepare jars and lids for canning.
Prepare the brine
In a saucepan, combine water, vinegar, sugar, salt, and spices. Bring to a boil and simmer for five minutes until the salt and sugar are dissolved.
Filling
Place beet slices into hot jars.
Add hot vinegar brine to cover the beets. Use a plastic utensil to remove air bubbles and add more brine, leaving a 1/2 inch headspace at the top of the jar.
Wipe the rim of the jar with a clean cloth.
Add lids and tighten firmly.
Transfer into hot water for 30 minutes.
