3 medium Granny Smith apples – peeled, cored, and cubed

Ingredients for the glaze:

1/2 cup (125 ml) of butter

2 teaspoons (10 ml) of 35% cream

1/2 cup (125 ml) of brown sugar

1 teaspoon (5 ml) of vanilla extract

Preparation:

1. Preheat the oven to 325°F (175°C). 2. Grease a 9-inch tube pan.

3. Beat the sugar, oil, vanilla, and eggs with an electric mixer until light and fluffy.

4. Mix the flour, baking soda, cinnamon, and salt, and fold them into the first mixture.

5. Fold in the apples by hand and pour the mixture into the prepared pan.

6. Bake for 55 to 70 minutes or until a toothpick inserted comes out clean.

7. Let cool for about 20 minutes in the pan and invert onto a rack.

To prepare the glaze:

Put all the ingredients in a small saucepan and heat over medium-low until you get a flowing caramel texture. Do not overcook. Pour over the cake while still warm.
