
Classics never die... just like this delicious chicken and rice soup!
A comforting and flavorful soup!
Ingredients
1 tablespoon of oil
1 pound of boneless skinless chicken breasts or cooked and shredded chicken
1 cup of onion
4 1/2 cups of water
4 cups of chicken broth
1/2 teaspoon of garlic
1/2 teaspoon of thyme leaves
2 bay leaves
1/2 cup of diced carrots
1/2 cup of diced celery
1 package of rice

Preparation
In a pot, cook the onion until tender.
Add the water, chicken broth, garlic, thyme, and bay leaves. Bring to a boil.
Add the carrots, celery, rice, and chicken. Let simmer for 10 minutes or until the chicken is thoroughly cooked. Remove the chicken and set it aside to cool.
Cover and let the soup simmer for an additional 20 minutes or until the rice and vegetables are tender, then stir in the shredded chicken.
