Need a quick breakfast on the go? Jump in the car, turn on the radio, and take the opportunity to indulge yourself with this unforgettable and fantastic muffin!

Ingredients

  • 2 cups of flour
  • 3/4 cup of sugar
  • 2 teaspoons of baking soda
  • 1 teaspoon of cinnamon
  • 1 teaspoon of salt
  • 1 (8 ounces) can of crushed pineapple, drained
  • 1/4 cup of vegetable oil
  • 2 eggs
  • 2 egg whites
  • 1 tablespoon of vanilla extract
  • 3 cups of grated carrots
  • 1/2 cup of toasted chopped pecans
  • 1/2 cup of raisins

Preparation

Preheat the oven to 350 degrees Fahrenheit and butter a muffin pan.

In a bowl, combine the flour, sugar, baking soda, cinnamon, and salt.

In a second bowl, mix the pineapple, oil, eggs, and vanilla extract.

Add the pineapple mixture to the flour mixture.

Stir in the carrots, pecans, and raisins.

Divide the batter among the muffin pans and bake for 22 to 25 minutes.
