Nobody Can Resist 'Marry Me' Chicken!

Chicken generously seasoned, drizzled with a magnificent cream sauce. It's so good it's called the 'Marry Me' chicken!

It's time to see if it lives up to its name, with the person you're interested in or to keep the flame alive in your current relationship!

Ingredients:

2 large boneless, skinless chicken breasts

1/2 (125 ml) cup all-purpose flour

1/2 teaspoon (2.5 ml) salt

1/2 teaspoon (2.5 ml) pepper

1/2 teaspoon (2.5 ml) garlic powder

1/2 teaspoon (2.5 ml) paprika

2 tablespoons (30 ml) butter

2 tablespoons (30 ml) oil

2 tablespoons (30 ml) minced garlic

1 cup (250 ml) chicken broth

1 cup (250 ml) heavy cream for cooking

1 cup (250 ml) grated Parmesan

1/2 teaspoon (2.5 ml) red pepper flakes

1/2 teaspoon (2.5 ml) dried oregano

1/4 teaspoon dried thyme

1/3 cup (85 ml) chopped sun-dried tomatoes

fresh basil and grated Parmesan for garnish

Preparation:

1. In a shallow dish, mix flour, salt, pepper, garlic powder, and paprika, and coat the chicken in it.

2. Heat oil and butter in a large skillet over medium-high heat.

3. Add the coated chicken breasts and cook for 3 to 4 minutes on each side, or until golden and cooked through.

4. Remove the chicken from the pan and set aside.

5. In the same pan, add minced garlic and cook for 1 to 2 minutes.

6. Stir in the chicken broth and heavy cream, deglazing the pan as you stir.

7. Add Parmesan, red pepper flakes, oregano, and thyme, and mix over low to medium heat.

8. Add the sun-dried tomatoes to the pan and stir until the sauce is well mixed.

9. Continue to stir and let simmer on low heat for 5 minutes as the sauce thickens and bubbles.

10. Add the chicken back in for 10 more minutes, basting the chicken with the sauce until thoroughly heated.

11. Garnish with chopped fresh basil and grated Parmesan, and serve hot with pasta, rice, or potatoes.
