Oven-Baked Chicken and Potatoes with Mustard and Maple Flavor

Prepare this not-at-all-complicated recipe for your weeknight dinners and save the leftovers for your lunches.

The whole family will love it!


Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 to 1-1/2 lbs (454-680 g) of small new potatoes, halved
  • 1 tablespoon (15 ml) olive oil
  • freshly ground salt and pepper to taste
  • 1/3 cup (85 ml) brown mustard
  • 1 tablespoon (15 ml) yellow mustard
  • 1/4 cup (65 ml) maple syrup
  • fresh chopped parsley, for garnish


Preparation

Preheat the oven to 375 °F (190 °C).

Season the chicken and potatoes with olive oil, salt, and pepper.

Transfer the chicken to a nonstick skillet or an ovenproof dish. Set aside.

In a bowl, mix the mustards and maple syrup.

Whisk until the ingredients are well blended.

Pour the mixture over the chicken and potatoes. Coat well.

Bake for 45 to 50 minutes or until the chicken is cooked and the potatoes are tender.
