Ingredients

  • 3 tbsp. butter
  • 4 cloves of garlic minced
  • 3 tbsp. all-purpose flour
  • 2 1/2 cups of milk
  • 1/4 cup freshly chopped parsley, plus more for garnish
  • pinch of red pepper flakes
  • 1/2 cup dry white wine
  • 1 3/4 cups shredded mozzarella, divided
  • 1/2 cup freshly grated Parmesan
  • salt and pepper
  • 1 pound of roughly chopped shrimp
  • Juice of 1 lemon
  • 10 lasagna noodles cooked
  • 2 cups of ricotta

Preparation

  1. Preheat oven to 350 degrees f.
  2. In a skillet, melt the butter. Add the garlic and cook for 1 minute, then add the flour and whisk until slightly golden, about 1 more minute.
  3. Stir in the milk, the parsley, and a pinch of red pepper flakes and let the sauce thicken for 2 to 3 minutes.
  4. Add the wine, 1/2 cup of mozzarella and the Parmesan, then season with salt and pepper.
  5. Add the shrimp and cook 2 minutes more. Stir in the lemon juice.
  6. Place cooked noodles on a clean work surface.
  7. Spread a thin layer of sauce in a large baking dish.
  8. On the noodles, spread a layer of ricotta, then a layer of shrimp mixture.
  9. Roll up and pour remaining sauce on top.
  10. Sprinkle with 3/4 cup of mozzarella.
  11. Bake for 20 minutes, then bake on broil for 2 more minutes.
  12. Garnish with parsley and serve.
