Ingredients
Preparation
Cut the tomatoes into dice or small cubes. Set aside.
Place a large pot of water on high heat and bring the water to a boil.
Season each side of the chicken breasts with salt and pepper.
In a pan, on low heat, add the olive oil and cook the chicken breasts until they are nicely golden. They should not brown or become too dry.
Add butter to the pan, still on low heat.

Add the white wine and let simmer for 15 minutes on low heat. If the liquid evaporates, add some of the pasta water (a few tablespoons at a time). Check the seasoning and add salt and pepper, if desired.

Add salt to the pasta cooking water once the water is boiling, then add the spaghetti and cook 2 minutes less than the instructions on the package.
Finely chop half of the basil using the stem end first, keeping the tip of the leaf for later.
Put the chicken breasts back in the sauce along with the chicken cooking liquid. Let reheat for 1 minute.
Drain the spaghetti and add them to the sauce.

Cut the rest of the basil leaves (keep a few leaves free for garnish). Add the basil to the pasta, then mix well.
Serve the pasta on hot plates and place the chicken breasts on top. Place the tomato pieces on top of the chicken breasts, then add fresh basil leaves to garnish.
