Salmon and asparagus foil packs with herb butter and garlic are easy to prepare, healthy, and make for a quick and tasty meal ready in 30 minutes any season.

Making herb butter is very simple. You just need to let the butter come to room temperature in advance so that it's easy to mash with garlic and seasonings using a fork. Then, you can place a few spoonfuls of herb butter on the salmon and asparagus, wrap everything up in a neat little aluminum foil package, and grill or bake.

The flaky salmon and tender asparagus will melt in your mouth!

Preparation Time: 10 minutes

Cooking Time: 20 minutes

Yields 4 servings

Ingredients

  • 4 boneless, skinless salmon fillets
  • salt and pepper to taste
  • 1 pound (454 g) asparagus, trimmed
  • 1 lemon, sliced (with extra wedges for garnish)
  • 1/2 cup (125 g) butter, at room temperature
  • 3 teaspoons (15 g) Italian seasoning
  • 3 teaspoons (15 g) minced garlic
  • fresh thyme or parsley, for garnish

Preparation:

  1. Generously season salmon with salt and pepper on both sides.
  2. Place one salmon fillet and 1/4 of the asparagus in the center of a 12-inch (30 cm) piece of aluminum foil. Repeat with remaining salmon and asparagus on 3 other pieces of aluminum foil.
  3. Slide lemon slices under the salmon and asparagus.

  1. In a small bowl, mix together the butter, Italian seasoning, and garlic.
  2. Place large amounts of herb butter onto the salmon and asparagus

  1. Fold the aluminum foil around the salmon and asparagus, ensuring the ends are sealed well so juices and butter don't come out while cooking.

  1. Grill over medium-high heat for 6 to 8 minutes on each side, or bake at 400 F (200 C) for 20 minutes, until asparagus is tender and salmon is flaky.

  1. Drizzle with fresh lemon juice and serve immediately.
