Apples and cinnamon make a fantastic duo! As toppings for pancakes, in pies, in cakes... and also in muffins!

And when the recipe is extraordinarily easy to prepare, it's even better!

These apple cinnamon muffins will prove to you that you don't need hard-to-find ingredients or complex steps to make a delicious dessert. 

And the topping they're adorned with gives them a crispy, golden, sweet touch that you'll enjoy!


Ingredients

Muffins

  • 1 cup (115 g) all-purpose flour
  • 1/2 cup (57.5 g) whole wheat flour
  • 1/2 cup (112.5 g) granulated white sugar
  • 1/2 cup (100 g) packed brown sugar
  • 1/2 teaspoon (2.5 ml) salt
  • 2 teaspoons (10 ml) baking powder
  • 2 teaspoons (10 ml) ground cinnamon
  • 1/3 cup (85 ml) vegetable oil or canola oil
  • 1 large egg
  • 1/3 cup (85 ml) milk
  • 2 medium apples, peeled, cored, and chopped

Topping

  • 1/4 cup (56 g) granulated white sugar
  • 2 tablespoons (30 ml) all-purpose flour
  • 2 tablespoons (30 ml) butter, softened
  • 1 teaspoon (5 ml) ground cinnamon


Preparation

Preheat the oven to 400 °F (200 °C). 

Grease a regular muffin pan or line with paper liners.

In a medium bowl, whisk all dry ingredients until they are combined evenly.

Then add the oil, egg, and milk, and mix until everything is well combined.

Next, fold in the apples and gently stir with a spatula.

Divide the batter into each muffin cup.

In a small bowl, mix the ingredients required for the topping using a fork.

When the topping has a crumbly texture, sprinkle it over the tops of the unbaked muffins.

Bake in the oven for 15 to 20 minutes.


Notes:

To lighten up the recipe a bit, replace the 1/3 cup of oil with 1/2 cup applesauce and 1/2 cup oil. The muffins will be just as moist.

This recipe can also be made entirely with white whole wheat flour instead of traditional whole wheat flour.
