There is nothing quite as tasty as a chicken pot pie, creamy and generously filled.

Here is the secret.

 

INGREDIENTS :

5 tablespoons (75 grams) of butter

1 stalk of celery, chopped

3 green onions, chopped

1/3 cup of flour

2 cups (500 ml) reduced sodium chicken broth

¼ cup half-and-half or cream

1 ½ teaspoons (8 ml) poultry seasoning (see mix at the bottom of the page)

1 ½ teaspoons (8 ml) garlic salt

1 teaspoon (5 ml) dried tarragon leaves

¼ teaspoon (1 ml) lemon pepper

¼ teaspoon (1 ml) pepper

3 cups (375 grams) cooked chicken, diced

2 cups (300 grams) frozen vegetables, thawed

2 pie crusts

1 large egg beaten with 1 teaspoon of water

 

PREPARATION :

Preheat the oven to 350°F (180°C). Grease the bottom and sides of a 10-inch (25 cm) diameter ovenproof skillet or similar dish.

In a large skillet, melt the butter over medium-high heat. Cook the celery and green onion for 3 minutes or until the celery starts to soften.

Reduce the heat to medium and add the flour, stirring constantly until incorporated into the butter.

Continue whisking while adding the chicken broth, then increase the heat and bring to a boil. Add the half-and-half (or cream) and reduce the heat to simmer. Add the poultry seasoning, garlic salt, tarragon, lemon pepper, and pepper. Mix well and let simmer for 5 minutes.

Remove from heat and add the chicken and vegetables, then mix well.

Cover the dish with a pie crust and press the dough firmly on the bottom and sides. Pour the mixture inside.

Place the second crust on top and seal the edges by pinching them together.

Make cuts in the center of the top crust to allow steam to escape and brush with the beaten egg.

Bake for 40 to 45 minutes in the oven until the crust is golden. Let rest for 10 minutes before serving.

 

Poultry seasoning :

2 teaspoons (10 ml) ground sage

1 ½ teaspoons (8 ml) thyme

1 teaspoon (5 ml) ground marjoram

¾ teaspoon (4 ml) ground rosemary

½ teaspoon (3 ml) nutmeg

½ teaspoon (3 ml) pepper

 

Mix everything together and keep in an airtight container.
